Baby Bullet, Healthy Babies!!!

This Year I went out and bought myself a Christmas Gift…a new Baby Bullet! Woohoo!!! Good times! You can tell how much your priorities have shifted when you get so excited about a Baby Bullet!

This is my second Baby Bullet, the first one I bought when Kailee (who is 5) was born and it lasted a while, with fairly regular use. While my middle child is now 3, the large batch mixer is the perfect size for Green Smoothies (so yummy) so YES I did use it almost everyday. Ultimately, I believe, the motor went out, user error I’m sure! J

I can already see the eyes a’ rolling… “You’re one of THOSE moms…well I just don’t have time for all that”! Calm down, and stop being so judgmental. I’m not here saying, you MUST do this…I’m here saying, “Hey it’s really not that difficult and the benefits are worth it, to me!”

I mean after all, would you eat fast food everyday? I hope for most of us the answer is NO. However, if the answer for you is yes, don’t get frustrated. Start with small changes and keep going! And remember, you are in the right place! #HealthyLifestyle

Well, let’s think about packaged baby food as fast food and/or processed food – with extra additives, salt, sugar, etc; then why wouldn’t we make it and save the packaged (convenience) baby food for the emergencies.

Making baby food is not only super simple, it’s a real cost saver. I normally make Kash’s food right before he eats based on what we have in the house and/or what we are eating for dinner.  I will make batches and freeze some a few days a week as well – for the above mentioned emergencies. The best part, you never have to worry about running out of baby food. The Baby Bullet is so small and easily packed I take ours with us on vacations. I also have the steamer, and its small enough to steam the baby food but not large enough to be a hassle when cleaning. You can store the extra food in the containers that are perfect serving size containers and great to take on the go! I know, I know…I sound like an infomercial! Honestly, I don’t know that I would’ve last making baby food for three kids without a Baby Bullet!

To give you an idea how easy it is to make food:

Apples:

  • Slice and Peel
  • Set in Steamer (takes about 10 mins)
  • Add to Baby Bullet
  • Add Breast  Milk
  • Blend for 10-20 secs
  • Serve or Store

(To warm up the baby food you can place the storage container in warm water)

Once your baby is able to eat mixtures it is so great to have. I make brown rice, with chicken and veggies for the little ones in my bullet!

I know some of you are thinking, “why wouldn’t I just use a blender”…well it seems logical but I’m sure those that choose the blender route instead of the bullet route don’t last near as long. Why? Because of the awesome design of the baby bullet, the perfect size of the mixing containers and the serving size storage containers all make it so easy. I made the same mistake too. When my bullet finally went out, I tried the blender route. I lasted one day before I went out and bought a new Baby Bullet. So for those of you thinking it’s the same thing as using a blender, IT’S NOT!!! J Take my advice; buy the Baby Bullet from the beginning. Let’s start our babies off on the best possible path to a healthy lifestyle!

I’m always on the lookout for amazing real food recipes for desserts…especially brownies! These walnut brownies do not disappoint. If you are looking for a more cake like brownie that is still rich in flavor, you will love these! This is the perfect way to satisfy those sweet tooth cravings, without loading your body up with the extra chemicals, additives and other junk. I can notice a huge different the way my body responses to the package desserts versus the homemade real food desserts! An extra bonus for me is today I’m carb loading for my half marathon in the morning; while I don’t recommend loading up on sweets (real food or otherwise) before a race…I will have just one! J

 

Walnut Brownies –    Forks over Knives Cookbook

  • 3 oz extra firm tofu, drained (yes tofu!)
  • 1/3 c pitted prunes (or dates for extra sweet)
  • ½ c unsweetened plant-based milk, heated until very hot not boiling
  • ¾ c 100% pure maple syrup
  • ½ c plus 2 tablespoons unsweetened cocoa powder
  • ¾ c water, heated until very hot not boiling
  • 2 teaspoons pure vanilla extract
  • 1 c whole wheat pastry flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ c walnuts, chopped

 

 

  1. Preheat oven 325 degrees. Line 8×8 inch pan with parchment paper.
  2. Crumble tofu in blender. Add prunes. Pour in the hot milk and puree for about 3- seconds. Add the maple syrup and puree until smooth.
  3. Add cocoa powder to mixing bowl. Add the hot water and mix with a fork until mixed well.
  4. Add the prune mixture to the chocolate mixing bowl and stir well. Mix in the vanilla.
  5. Add in half of the flour and add the baking soda and salt. Mix well. Mix in the remaining flour and fold in the walnuts.
  6. Spread the batter into the baking pan. It will be thick, but it will spread out to the corners of the pan.
  7. Bake for 17-20 minutes. The top should be firm to the touch.
  8. Let cool for 20 minutes and serve.

 

Makes about 12 delicious walnut brownies!

I have FINALLY hooked my hubby on green smoothies!!! 🙂 For those that don’t know Sai, he is not always excited to try new things. He started by occasionally taste testing my smoothie and then he started drinking one daily but only because I would make it and say, “here, DRINK IT”! Now, he wakes up and asks, “what no smoothies today”!

Yes, this process has been going on for a few years but some people are more difficult to convince. For Sai, he has seen and felt the difference in his days after he has a green smoothie for breakfast. He will often times have TWO, one in the afternoon as well!
So wives, husbands, daughters, brothers, moms and dads; if you are trying to share the greatness of green smoothies with the ones you love be patient and keep sharing. Start with the recipes that will be most comfortable for your loved one and then expand their horizons gradually over time.  

If they are a peanut butter cup lover like us, try this delicious smoothie for a starter! Anything with peanut butter has to be good!

 

Recipe Adapted from Simple Green Smoothies

Peanut Butter Cup Smoothie 

  • 2C Spinach (I use fresh spinach that I have previously frozen)
  • 2C Almond Milk – unsweetened
  • 2 Bananas
  • 3TBS Cacao
  • 2TBS Peanut Butter

Blend Spinach and milk until smooth. Add remaining ingredients and blend well.

Black Bean Brownies

It’s summertime, the kids are home and I LOVE baking with my kiddos. Since I’m always on the search for yummy homemade goodness I decided to share one of my favorite finds! While we are not a gluten or dairy free home I still love to make recipes that are because they are so delicious! So next time your family wants brownies for dessert try this recipe! It’s fast and easy (a must in our home). Made with all real food ingredients you can enjoy a yummy dessert without the all the extra (unknown) additives that won’t leave you feeling, blahhh! 🙂

TIP: The first time I made these I didn’t tell the kids nor the hubby these were black bean brownies. They devoured them before I could tell them! 🙂

Ingredients

  • 1 1/2 cups black beans (1 15-oz can, drained and rinsed very well) (250g after draining)
  • 2 tbsp cocoa powder (10g)
  • 1/2 cup quick oats (40g) (See nutrition link below for substitutions)
  • 1/4 tsp salt
  • 1/3 cup pure maple syrup or agave (or honey, but not for strict vegans.) (75g)
  • pinch uncut stevia OR 2 tbsp sugar (or omit and increase maple syrup to 1/2 cup)
  • 1/4 cup coconut or vegetable oil (40g) (See nutrition link for substitution notes)
  • 2 tsp pure vanilla extract
  • 1/2 tsp baking powder
  • 1/2 cup to 2/3 cup chocolate chips (115-140g) (Not optional. Omit at your own risk.)
  • optional: more chips, for presentation

Total Time: 15m

Yield: 9-12 brownies
Instructions

Black Bean Brownies Recipe: Preheat oven to 350 F. Combine all ingredients except chips in a good food processor, and blend until completely smooth. Really blend well. (A blender can work if you absolutely must, but the texture—and even the taste—will be much better in a food processor.) Stir in the chips, and then pour into a greased 8×8 pan. Optional: sprinkle extra chocolate chips over the top. Cook the black bean brownies 15-18 minutes, then let cool at least 10 minutes before trying to cut. If they still look a bit undercooked, you can place them in the fridge overnight and they will magically firm up! Makes 9-12 brownies.

Ever just have ONE OF THOSE DAYS?! It seems the busier we get the more days like this I have – and yesterday was no exception. After maybe 4.5 hours of sleep, and long day of work, work, kids and work I get Kailee from school and I’m thinking, “OK, I have 2 hours before gymnastic class…I can totally squeeze in a nap!” (funny thing is, I never nap – no time) I also know I’m training for the Hospital Hill Half Marathon and I need to get in a 4 mile run and strength training today. Yes, I could put it off until tomorrow – but friends, that is a slippery slope – why put off till tomorrow what we can do today.

 

After we got home, I feed the kids and we packed up to go for our run! My hubby trains in the evenings so either I take the kids or I don’t go. On occasion I will go for a night run, but I knew I was too tired for that today! It wasn’t by best run, but I got my miles in and it was a decent run. Most importantly, my kiddos had a great time. Kailee LOVES riding her bike and the boys just love being outside. They even got out and ran about 1 mile with me – and afterwards I was so happy we went. After gymnastics class I was able to squeeze in a good strength training workout and then bed! 🙂
Everyday, every workout will not be perfect…DO IT ANYWAYS!  

There is no perfect time to start…there is only TODAY!

Week 4 of 12 week half marathon training

Training everyday can become time consuming and really start to feel like a burden…especially with hectic schedules and/or kids or both! One thing I will always to say is, “take the little ones with you”! Not only are you getting to spend time together but you are also modeling a healthy, active lifestyle. Sometimes all three kiddos go running with me, and other times one, two or even none.

Today was an extra special day for me because my daughter – the oldest – went on a bike ride with me. Today was my cross training day and I spent the afternoon with my daughter, laughing, racing, and having a great time!

 

Finding ways to incorporate your workouts into your day and make it part of your lifestyle will make it so much easier and much more enjoyable! Once I stopped looking for reasons why I couldn’t….I started finding ways I could! J

 

I finished my training of with a short yoga routine and some strength training while watching the Royals Home Opener! J GO ROYALS!!!

If you are like me, anything I can make ahead of time is always a great option. J  And when you have real food already made it makes those busy mornings or evenings so much easier. And between the kids’ activities, school activities, church and just wanting to be outside enjoying the nice weather some evenings have less dinner prep time available. On those nights, try these delicious breakfast muffins. We call them breakfast muffins but they make a great little meal on the go or in a rush. I made a batch (or two) and freeze them – and then just pop them into the toaster oven or microwave and Viola!

 

Breakfast Muffins

Ingredients

  • Also need: Foil muffin holders for baking

 

Directions

  1. Preheat the oven to 350 degrees F.
  2. Distribute 12 foil muffin holders into a muffin baking pan. If the foil holders are lined with paper either don’t use those or make sure they are on the outside as shown in the picture.
  3. Cut the sandwich bread into half inch squares and evenly distribute them on the bottom of the muffin cups (pictured above).
  4. In a mixing bowl or large measuring cup that has a pour spout thoroughly whisk together the eggs and milk. Add a few dashes of salt and pepper if desired.
  5. Evenly distribute the egg mixture into each muffin cup. It’s okay if the bread pieces float to the top.
  6. Sprinkle an equal amount of both the grated cheese and the crumbled bacon (or sausage) into each muffin cup on top of the egg mixture.
  7. Bake at 350 for 15 minutes or until eggs are set. 
    Enjoy or freeze (in-between sheets of wax paper) for another day!

This is a great recipe to change up and make your own. You can omit the bacon/sausage if you prefer and add in spinach, celery etc. I usually have the kids help me make these; they are a fun kid recipe to make. They each choose their own fillings, and most people are surprised that they will opt for spinach! Plus getting them involved in the baking process makes it easier for me…because they will eat them no questions asked! J

On our journey to cutting out/ decreasing the amount of processed food our family eats, I have been lucky enough to run across a few awesome ideas; that are simple and so very kid approved. One of my favorites recipes to make my kiddos is smoothie pops!

Our family loves green smoothies so serving the smoothie as a popsicle should be just as delicious, right?! Well, yes, IT IS! And so very simple. Just choose your favorite smoothie recipe, blend it up and pour the smoothie into your reusable popsicle and freeze. I purchased my popsicle molds from Amazon.com.

Any type of popsicle molds will work – but these are particularly great for lunches and very kids friendly for eating on the go.

 

I send these in my 1st grader’s lunch all the time. When lunch time rolls around the smoothie pop has defrosted just enough to be a cold yogurt-ish treat.

 

Today the boys were outside enjoying their smoothie pops and the gorgeous February weather! 🙂

 

Today’s smoothie pop was a pineapple, mango banana creation.

  • 2 cups spinach
  • 2 cups coconut milk
  • 1 cup pineapple (frozen)
  • 1 cup mango (frozen)
  • 1 banana

 

Blend the spinach and milk until smooth then add the fruit and blend well. Pour the smoothie into your popsicle molds and freeze overnight or for 4-6 hours! Enjoy!

 

I hope your family loves these smoothies pops as much as mine do. Cutting out the processed foods one snack/meal at a time!

20 Minute Treadmill Workout

If you are anything like me, having to strategically plan your workouts between meetings, kids’ naps, drop off and pick up times, meal times, activities….etc. ;you know that, well, some days life happens and before I can blink the day is over. And while I prefer to train during the day there are days I don’t make it outside and I use my….treadmill. While you can still do any training run on a treadmill I normally opt for a quick speed training workout when forced to treadmill running. This is also a great workout for when you are in a hotel and need a good quality but quick workout.

I use interval training in my weekly schedule interchanging between my treadmill workout and an outside hill workout. Plan on the chaos and adjust to it, and find ways to still fit your workouts in – remember every workout everyday doesn’t have to be perfect but something is always better than nothing! 🙂

The plus side of my treadmill workout is there are so many amazing benefits of interval training whether or not you are marathon training, including;

  • Increased running speed
  • Increased athletic endurance
  • Increased cardiovascular efficiency
  • Increased fat loss

20 Minute Treadmill Workout  4 SETS

  1. Fast Walking on the incline – 2 minutes (speed 3-4 incline 8-10)
  2. Running – 2 minutes (speed 5-8)
  3. Walking – 1 minutes  (speed 2-3)

 

Four Sets.

You can begin with a 2-5 minute walking warm-up and end with a 2 minute walking cool down.

After this workout, if you don’t feel like you had an amazing workout, then you need to increase your speeds on 1 and 2.  

 

Remember, each interval should be challenging but you are only doing each for 2 minutes so make it count and don’t cheat.
